We used this drupal 8 method on a project and ran into issues whereby when you ran drush updb --entity-updates the fields that we ran through this function would be marked as requiring an update. It would then attempt to update the field schema again in mysql. For us this would then fail as there was already field data in there. This was preventing other update tasks from running.
