How do I display a field twice in a node's display?
Should be pretty easy if you use Display suite:
Add a dynamic field (admin/structure/ds/fields/manage_ctools) and select the entity type (node).
Your new field should be in the manage display tab …

How do I restrict view/edit access to a custom content type node to only the user it belongs...
You can use the Node access user reference module.
Gives content access permissions to users for content that references the users with User reference or Entity reference.
