Working on Drupal 8.8.4

I simply need to change the title on the admin page Taxonomy which lists the existing vocabularies.

As far as I know/read, the routing.yml should be modified? (only the defaults_title parameter?)

Inside the taxonomy.routing.yml file in taxonomy folder, I only get the form routes for taxonomy term, if I am correct.

So I guess I need to modify the route elsewhere?

I have tried system.routing.yml, listing a lot of admin routes (I thought it was the jackpot) but there is no route to Taxonomy page.

Could someone tell me where to go and which static route to change?

Thanks to @leymannx, problem solved.

With Devel Kint, I found the route name I needed : entity.taxonomy_vocabulary.collection Using this route name in the function MYTHEME_preprocess_page_title like below in leymannx answer, I have managed to edit the title of the Taxonomy page. Works for any page, front or admin theme, find the route name and modify accordingly.
